QUALITY THROUGH PRODUCTION

From Our Tea Gardens to Matcha: Quality at Every Stage

Good matcha begins with carefully prepared tencha, and good tencha starts in the tea garden. For over 20 years, our tea gardens have been dedicated to growing tea for matcha production. From shaded cultivation to milling and finished-lot review, we manage quality at every stage.

Tea Garden Management

Step 01Rows of tea bushes across a hillside with trees behind the tea garden

Cultivar Selection

Our tea gardens cultivate matcha-suitable varieties, including Longjing 43 and Zhongcha 108. We select leaves with the color and flavor profile required for the intended grade.

Step 02Rows of green tea plants growing beneath a supported shade canopy

Pesticide-Free Cultivation Practices

We do not apply pesticides in any of our tea gardens. Physical pest-control methods are used as part of our garden management.

Step 03Tea plants beneath black shade cloth before harvest

Pre-Harvest Shading

All our tea gardens use pre-harvest shading. Tea plants are shaded for approximately 20 days before picking to help develop the green color and umami character sought in matcha.

From Tencha to Matcha

Step 04Industrial tea-leaf drying equipment inside a processing facility

Steaming & Tencha Preparation

Fresh leaves are steamed and dried to help retain their green appearance and fresh tea character before being prepared as tencha.

Step 05Matcha powder leaving a milling machine into a collection tray

Temperature-Managed Milling

Prepared tencha is finely milled while excess heat is managed. The powder is checked against the applicable grade’s fineness requirements.

Step 06Production team member wearing a cap and mask beside enclosed processing equipment

Hygienic Production & Lot Review

Hygiene and foreign-material controls are applied during production. Each finished lot is identified and reviewed against the agreed specification and reference sample.

BATCH CONSISTENCY & TRACEABILITY

Matcha Consistency for Repeat Orders

Changes in matcha color, flavor or texture can affect your recipes. We classify and store tencha—the prepared tea leaves used to make matcha—blend where applicable, and control milling conditions. Finished batches are compared with the agreed grade specifications and approved reference sample.

01

Control Milling Conditions

We manage milling conditions for the selected grade and check the finished powder against its specifications.

02

Classify Tencha Lots

We identify tencha lots by harvest season and assess their color and relevant quality indicators before classified storage.

03

Store Tencha at −18°C

Cold storage helps maintain tencha quality before milling and supports supply planning throughout the year.

04

Blend Within Grade Requirements

Where applicable, we combine selected tencha lots to balance color and flavor within the chosen grade’s raw-material requirements.

How We Check the Finished Batch

We compare finished matcha with the approved reference sample and agreed grade specifications using a consistent preparation method.

Q

Can you match an existing matcha profile or benchmark competitor sample?

Yes, absolutely. Our in-house tea masters and sensory lab routinely conduct reverse-matching.
